So I'm always looking for new recipes to try and since I've been married. Especially to my husband who loves to eat! I've actually started to enjoy cooking more and more.
Buzzfeed had an interesting post a few weeks ago with "19 Delicious Spaghetti Dinners" that looked so good I was tempted to try a few. So we both picked out a recipe for me to make that week for dinner. Jokingly but not jokingly, we teased each other on whose choice would be better. So here's our take on the recipes we tried!
Spaghetti with Olives, Capers and Roasted Red Peppers: Recipe Here
(We are gluten free in our house now, so both recipes were made with quinoa pasta.)
This recipe was super easy to make. The longest part was just waiting for the water to boil for the pasta! Also, I only spent between $5-10 for the entire meal. The dish was very light, we both could've gone for more roasted red peppers in the dish and we did add a little extra lemon for more flavor. Also added a little parmesan cheese on top. I could've done with less capers, but he loves them.
We both felt like it needed a little something else more to it. I think next time I will add some lemon chicken breast with it. It would pair nicely and be more satisfying.
Overall: Good, but on the lighter side.
Spaghetti with Peanut Sauce and Snap Peas: Recipe Here
This recipe was also fairly simple to make, and very affordable. I substituted the neutral oil with butter. (we don't cook with oils) and also, we used gluten free pasta with this dish as well. I love dishes with peanuts, peanut sauce or anything of the sort so I built this dish up in my mind with how amazing it would taste even before I tried it. It didn't quite meet my expectations. Mixing the peanut butter and the soy sauce was kind of challenging and weird at first. I had to mash up the peanut butter with my whisk in the soy sauce to get it to combine.
This dish was very rich, and much more filling. I made the same exact portions as the last dish, but couldn't finish this dish at all, compared to still wanting more with the other dish. We both added extra soy sauce after tasting the dish. It was very peanut buttery. Almost too much, even for me. I would probably use half the amount of peanut butter for the sauce if I make it again. But it was pretty good! We both enjoyed it. Actually so did the baby!
Overall: Good. Very filling, and a little too much peanut butter.
His Pick: Spaghetti with Olives, Capers, and Roasted Red Peppers. It just had the right blend of flavors and would go nicely with chicken or fish.
