Salt and Vinegar Kale Chips

Adding a little more greens in your life? 
Have you tried Kale Chips yet? How about Salt and Vinegar Kale Chips
They are strangely addicting...

Here's how to make them yourself!

1. Tear up kale into bite sized pieces. Try to keep them relatively the same size. (make sure you washed the kale first).

2. Toss the kale in a bowl with a little bit of vinegar and then lay out to dry on a baking sheet over a paper towel. (This part takes a while. So feel free to skip it if you just want regular kale chips.) Meanwhile, preheat your oven to 350.

3. Once they are dry, toss the pieces of kale in a bowl with a little bit of olive oil. Use sparingly!!! Using clean hands rub each piece to evenly coat it lightly in olive oil. My husband's cousin recommended rubbing the olive oil on your hands first then tossing to avoiding over-doing with the olive oil on the kale. It's up to you which you prefer.

4. Lay the kale in a single layer on a baking sheet lined with parchment paper.

5. Sprinkle evenly with salt. I used sea salt. Note: my first batch I didn't add enough salt for my own liking, so the next I laid it on thick (most of it bounces off) and it was much tastier!

6. Bake for 5 mins. Check and flip pieces if needed. Bake for another 5 mins and check on kale again. I removed and pieces that were done. (Should be crispy, lightly brown-pale green) Check on any remaining pieces every minute until all chips are evenly cooked.

7. Eat them up!! Enjoy your Salt and Vinegar Kale Chips!

Welcome to the Emerald City

I could help but notice a color trend in this week's episode of 90210's "Were Not Not in Kansas Anymore". They may have not been in Kansas, But they were certainly in the Emerald City!

And yes, I do watch 90210! It's one of my shameless girlie shows I make my husband watch with me from time to time. (He was actually a guest star in a season one episode! Remember Annie's nerdy date to the Prom? That'd be my husband with some fake braces! Check it out on Netflix! Ending shameless plug

Easy Flower Bouquet

I found this idea on pinterest and tweaked it to make it into bouquets for my daughter's baby dedication.

This easy party decoration idea is great for parties for little girls, showers, or really any occasion and you could use any color too!

All you need to make the flowers are some streamers (yes, streamers!) a styrofoam ball, and glue. (I prefer a hot glue gun.)

Step One: Fold the edge of the streamer down, as in to fold it a third of the way down.

Step Two: Twist and bunch the streamer as you go to make a full looking flower.

Step Three & Four: Begin adding flowers to the styrofoam ball with hot glue gun.

Step Five: Cover enough area until you reach your desired amount. I left just enough for the ball to nestle perfectly into a clear cylinder vase.

Step Six: Set up your decor and you're done!

Pair with candles or whatever you like, for a beautiful centerpiece!

Here, I used the same vases filled with floating candles at my daughters' baby dedication. I wish I had the opportunity to had take a better photo of the whole spread! (Epic Blogger Fail! I was so busy that day!) However, it was beautiful and I had a ton of people asking me about my beautiful centerpieces. (Epic Win!!)

My Favorite Salad

Today I'm sharing my favorite salad! I love fruit and nut tossed salads, especially apple walnut. 

This salad is so easy to make you can literally make it with one hand. (I know, because I did while holding my baby!) 

Here's the recipe:
Toss some clean romaine lettuce in a bowl. 
Next, add some light balsamic vinaigrette dressing, about 2 tablespoons. 
Then add about 1/4 cup of feta cheese, 1/4 cup of chopped walnut pieces, 1/4 cup of craisins, and 1/3 green apple sliced. 

Toss and Eat!

Balsamic Bruschetta

Balsamic Bruschetta Recipe

I love this Easy Balsamic Bruschetta Recipe, I recently made it for my daughter's baby dedication and it was delicious and easy appetizer to serve. I love Bruschetta and adding Balsamic just makes it that much yummier!

What You'll need:

8 Roma Tomatoes, diced
1/3 Cup Chopped Basil
1/4 Cup Shredded Parmesan Cheese
2 Minced Garlic Cloves
1 1/4 Tablespoon Balsamic Vinegar
1 Teaspoon Olive Oil
1/4 Teaspoon Salt
Ground Pepper to Taste
French Bread, sliced and toasted or Sourdough Crisps

Mix all ingredients well in a bowl and top on bread to serve!

Spring into 2013 Colors

Even though it feels like Christmas just happened, I'm excited to move past winter and onto spring. You probably have been seeing items in this amazing color palette in stores, I know I have. I am already in love! (Especially with Poppy Red, Lemon Zest and Dusk Blue!)

Congrats Emerald Green!

I love this years color, Emerald Green. I think it's one of those color that anyone can wear well, it's not too cool or too warm. It looks amazing as a rich accent color in any home and of course, Emeralds themselves are pretty nice too! (Anyone want to buy me one?!?) Where are you excited to add a little Emerald in your life?

Breakfast: It's what's for dinner!

My new favorite meal as of late has been breakfast for dinner. I love Breakfast. I love a good brunch on the weekends with my husband or friends. Though, those days are few and far between (dining out with a little one that is!)

So, lately when it's almost time to hit up the grocery store and there's nothing for dinner and neither of us want to spend money on fast food we turn to good 'ol breakfast!!

I love it especially because I have the time to take to put into a quality breakfast. Usually, I have some oatmeal and coffee and call it a day.

I really have to give my dad credit for turning me onto quality eggs for breakfast. I used to hate them, because let's be honest, eggs by themselves are kinda gross.

Now, I can't have my eggs without onions and throw in some peppers it's even better!!

The trick to perfect eggs is letting the onions sauté in a little butter in the pan first.

Then add in your fresh peppers and whisk up your eggs in a bowl. When your veggies are cooked pour  your eggs over the mix and scramble as usual.

Meanwhile, we had some delicious chocolate chip pancakes cooking too. To keep them warm we put them in a dish while we keep cooking the rest. 

Breakfast is served! And yes, I LOVE ketchup on my eggs!!! It's the best way to have them!
